The Cajun actually means a mixture from the Southern and the French cuisine. This recipe represents chicken with Cajun spices, vegetables, and cream sauce. It is a little like in the county style however it is so tasty.
For preparing this meal you will need around 40 min and this recipe is for 2 portions. So let’s take a look:
- 4 ounces linguine pasta
- 2 skinless, boneless chicken breast halves
- 2 teaspoons Cajun seasoning
- 2 tablespoons butter
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 4 fresh mushrooms, sliced
- 1 green onion, chopped
- 1 cup heavy cream
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground black pepper
- 1/4 cup grated Parmesan cheese
Method of preparation:
First, you need to take one big pot and boil some water that you previously salted. Then include the pasta and cook it for a period of around 10 minutes. At the end drain it.
Then take one plastic bag and add inside the chicken and Cajun spices. Mix it a little bit in order for the meat to be coated in spices. Then put one skillet on medium heat and put a little butter or oil in order to sauté the chicken. This should last no more than 7 minutes.
After this, you need to include inside the red and green bell pepper, green onion and mushrooms and leave it to sauté for a couple of minutes more by lowering the heat.
Then include the basil, salt, cream, black pepper, and garlic and increase the heat again. Then include the linguine that you cooked, and leave it a little in the skillet to be heated through.
At the end, you can add some grated parmesan on the top of the serving.
